2 cups of oatmeal
1 tablespoon of coconut sugar
1 small package of coconut yogurt
¼ cup of chia seeds
¾ vegetable juice
½ cup of SoNatural Ginger Apple juice
1 tablespoon of coconut oil
1 tablespoon of baking powder
Grate ½ lemon, and store the zest
Add the oatmeal, coconut sugar, yeast, chia seeds, and lemon zest in a bowl.
In another bowl, mix the egg, vegetable juice and SoNatural Ginger Apple juice.
Combine both mixtures until a homogenous mixture is formed. Add the melted coconut oil.
Place in a cake pan and bake at 180°C for 25-30 minutes.
When the cake is cooled, top with coconut yogurt.
