SPELT PANCAKES WITH BERRIES

"The trick for ?these delicious pancakes is using Sonatural's almond milk because it also has fruit in it. It’s quite thick but very light and it works perfectly for this recipe." See here the recipe for Spelt Pancakes with Barries, by Catarina Guimarães.

(organic, if possible)

1 cup of spelt flour
1 cup of almond milk with berries from Sonatural
2 tablespoons of maple syrup (or coconut sugar)
2 teaspoons of baking powder
1 handful of mixed berries (fresh or frozen)
a dash of salt

And coconut oil for frying.

~ use a large container and mix the flour with the maple syrup, baking powder, salt and milk
~ put a large frying pan in medium heat. Add a bit of coconut oil and wait until it gets really hot
~ use the 1/4 cup to pour the pancake dough on the pan. Then add a few berries on top of the pancake
~ let it fry for about 3 minutes on each side of the pancake. Use a spatula to take it out of the pan
~ before pouring the dough for the second one, make sure the pan has enough oil. Add more oil whenever needed and always check between each new pancake
~ serve on a plate and add more berries and maple syrup on top of the pancakes

This recipe gave me 6 pancakes. The milk I used was offered by Sonatural
