Lemon-Coconut Mousse Recipe
Ingredients
1 can of coconut milk (use light coconut milk for a lower calorie version)
150 mL of Sonatural Lemon-Mint juice
1 tablespoon of cashew butter
2 tablespoons of grated coconut
Zest of half a lemon
Honey or stevia to taste (optional)
Instructions
Begin by adding all the ingredients except for grated coconut in a tall glass and mix everything together with a hand blender or blender until well incorporated. Add grated coconut and mix well. Put in the refrigerator for at least 3 hours for a more consistent texture. Serve with your favorite toppings—or pineapple, mint and a pinch of cinnamon will do the trick!
